Recipe: Awesome Alli Sandwich

I have been craving Sloppy Joes lately. This past month I’ve been experimenting with different versions of this recipe and the one that I’m posting is the best version I came up with. I named it after my wife because it’s a healthier version of the Sloppy Joe since the protein is ground chicken. Also, it looks pretty, like my wife, with all the fresh cuts of vegetables I used. Thus, the Awesome Alli was born…hope you like it:)

 Ingredients

1 Pound of ground chicken
1 Can of Manwich
1 Small can of Spicy V-8 Juice (you can use regular)
1 Package of large cut Vegetables from the produce section of Publix, see pic
1 Tablespoon of butter
Ground Pepper to taste
Wheat sandwich rolls

On medium high heat, add butter to a large sauce pan and melt.

Vegetables sautéed until almost soft

Add all the vegetables, stir and cover. Continue this until the vegetables are soft, stirring occasionally.

Remove vegetables and add ground chicken and ground pepper. Cook throughly and then strain the fat.

Add the Manwich Sauce and Spicy V-8 Juice. Stir. Then add cooked vegetables and stir again.

Cover and let simmer for 15 minutes. Stir occasionally.

All done! The Awesome Alli is born!

After 15 minutes or so, some of the liquid will be reduced and you can served immediately on a wheat sandwich roll.

Verdict

It’s awesome LOL! It was so damn good I took the left overs, mixed it with some elbow pasta, folded in some shredded cheddar cheese and made an American Chop Suey. Oh yeah, I’m sure you noticed I didn’t add any salt…I figured the V-8 Juice has plenty of sodium. I though it came out fine, but you may want to add a pinch of salt. Stay Hungry!
